This is goat cheese perfection! The two-layer cake appearance with the vegetable ash line is beautiful. Texture is creamy near the rind and more firm and crumbly in the center. Bright, clean flavor with lemony notes and just the right amount of tanginess. Works brilliantly on a salad, but I enjoyed it most with a drizzle of honey and some dried cranberries. One of my all-time favorites!
