Incredible depth of flavor in this properly aged Parmigiano Reggiano. Firm, crystalline texture with those delightful crunchy tyrosine crystals. The flavor is rich with notes of toasted nuts, butter, and a subtle fruitiness. Used it grated over pasta, but it truly shines when enjoyed in chunks with a few drops of aged balsamic vinegar.
